People are struggling with being overweight and terrible diseases are destroying the lives of happy families. I am convinced these are connected with what we consume every day.

Technology in food production is amazing. Our food grows faster and looks perfect. The shelf life of fresh, perishable food is extending to weeks. It is all about money. Is no one concerned about the health of a whole generation?By the end of 2013 I decided to start a new company to produce healthy food. After doing my research I found out that edible insects are a very healthy source of proteins, minerals and vitamins.

I found a partner with a food factory and the company Nochey BV was born.We developed meat products made from mealworms and grasshoppers. We have created food products everyone is familiar with, having a great taste minus the visibility of the insects. No chemicals are added at all, not for color, taste, or for extending the shelf life.

We collaborate with the University of Wageningen to validate the health benefits of our products.I was excited, but would the consumers accept the insects as an organic food? Will our products appeal to the human senses and be convincing enough to compete with foods like shrimp that people love to eat?

Shrimp do look like grasshoppers on your plate. The smaller, cocktail size even looks similar to mealworms. Is it true that people do not know what they are eating at all? Will they think of a cow while eating their steak or T-bone?Those examples will help a bit, but quality education is needed in order for edible insects to be accepted in the Western World.

So, I decided to write this book to emphasize all the benefits. By reading my book, I hope you will be as excited as I am and willing to try our healthy Nochey-products. Together we can change the world and even solve the world-hunger crisis one day.
